Sourdough olive boules

Abed levain recipe, about 700g olives added (double recipe)





Life lesson: chop olives before mixing into dough. The whole olives spewed out like little marbles all over the counter.

Crumb wasn't as open as I like. I may have degassed too much or not risen enough. Have to give this another try.
