Levain baguettes







Bake time =35 mins

Sourdough olive boules

Abed levain recipe, about 700g olives added (double recipe)





Life lesson: chop olives before mixing into dough. The whole olives spewed out like little marbles all over the counter.

Crumb wasn't as open as I like. I may have degassed too much or not risen enough. Have to give this another try.

I love that no one in the audience got the "bind" joke at the beginning - dead silence - It took me a second, I'm sure Conan spent some time thinking it up beforehand....

My last few baguettes get the ugly award... gonna have to work on that, now that I can make bread that actually tastes good...

Sunday April 18

2 wheat boules, 11 baguettes. All going to a friend's party, though I'm already 2 hrs late.

I let the dough bulk ferment too long - 4 days instead of 3 max. I think the baguettes came out a little pekid because of it.

About the blog

Set up mostly to document my breadmaking progess and tweaks to recipes. Will update from my iPhone so most posts will be brief and the photos will not be all that stellar, but I'll do what I can. Amazing oven spring. No crumb shot gave it to friends. Guess it could use deeper cut.



Baguettes

Reinhart sanfrancisco sourdough recipe from artisan breads every day. These came out really well. I've made this recipe a few times since and gotten good results every time. Stretch and fold rocks. I think I added 100g wheat to these, if not I know I did on later versions. Double recipe.











Sourdough pizza

Looked better than it tasted. Dough was cardboard probably because I let my daughter reshape and toss a bunch of times. Was fun though.

ABED levain recipe

79g olives
1224g levain dough

Cooked in pot. Used paper sling to lower (actually plop). 15 mins covered. 15 + 5 + 5 + 5 cook.

Nice crust. Ok crumb. Needed more rise time, it was getting stupid late- 3:30am for cook. Use more olives next time.
